These come together in under 30 minutes and feed a crowd. We serve these at the lodge on casual nights, and they disappear faster than anything else on the menu.
Ingredients
- 1.5 lbs ground mule deer
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 2 chipotle peppers in adobo, minced (plus 1 tbsp adobo sauce)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt to taste
- 12 small corn or flour tortillas, warmed
- For the lime crema: 1/2 cup sour cream, juice of 1 lime, pinch of salt
- Toppings: diced white onion, fresh cilantro, crumbled cotija cheese, sliced radishes, lime wedges
Directions
- Mix the lime crema ingredients in a small bowl. Refrigerate while you cook the meat.
- Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes.
- Add ground mule deer and break it up with a wooden spoon. Cook for 5-6 minutes until browned.
- Add garlic, minced chipotle peppers, adobo sauce, chili powder, cumin, and smoked paprika. Stir and cook for 2 more minutes.
- Add 1/4 cup of water and simmer for 2-3 minutes to create a saucy consistency. Season with salt.
- Warm tortillas in a dry skillet or over a gas flame. Fill each tortilla with seasoned meat and top with lime crema, onion, cilantro, cotija, and radishes.
